Garlic Butter Salmon

Ingredients:

  • 1 lemon, squeezed

  • 3-5 cloves of garlic depending on how much you love garlic

  • Minced - 500g of salmon, portioned out - I always buy the 450/500g pack on Shopee and then just cook the whole pack

  • 1 cauliflower head

  • 1 carrot 🔪

Prep

  • Wash the salmon and pat dry, refrigerate it till you’re about to cook it

  • Prepare a small bowl, mix the minced garlic with 2-3 tablespoons of melted butter, pepper and half of the lemon juice, stir well

  • Chop the cauliflower into florets and carrots into strips

  • Put the veggies into a bowl and mix with salt/pepper/paprika/a tad bit of oil to help with the mixing

Cooking:

  • Air fry the veggies in batches, I did the first batch at 170 deg and progressively reduced the temperature for the subsequent batches as the oil in the air fryer pan got hotter, my last batch was 150 deg, [note: do not overcrowd the air fryer basket, it prevents the veggies from being properly cooked]

  • Rub the salmon with salt, pepper and half of the lemon juice portion earlier, then fry immediately

  • Heat the oil in the pan, when it’s very hot, add the salmon SKIN SIDE FACING UP.

  • Let it cook for 5-7 minutes then flip it so the flesh side faces up.

  • Add the butter / garlic / lemon mixture, baste the contents of the pan.

  • Remember to check on your veggies!! Don’t burn them

  • Serve immediately with mashed potatoes or rice!
