Lemon Chicken Orzo Soup

This is my current go-to comfort food!

Typically I am used to having pasta like linguini or macaroni. Watching one Instagram video made me realise how we have not tried orzo pastas and how quick they cook. It was a cooked under 30 minutes, and very achievable for a home-cooked meal if you’re short on time.

Ingredients:

  • Chicken

  • Orzo grains

  • Carrots, celery, potatoes, any typical ‘stew’ vegetables

  • Half an onion

  • 1 teaspoon of butter, or oil if you’re not into cooking with butter

  • Vegetable broth or chicken broth. I prefer unsalted broth for this if I cook with chicken thighs as the flavour from the thighs is already quite distinct.

  • lemon juice, about half a lemon

  • (Optional condiments) - scallions / fried garlic to top it off, ground black pepper

Cooking -

  1. Prep the butter and melt over low-medium heat

  2. Turn up the heat and fry the celery, carrot, onions

  3. Add your choice of broth

  4. Cook the chicken to a boil.

  5. Add the lemon juice at the end when the mixture is boiled

  6. Stir the pasta in at the end (NOTE: it cooks very quickly, don’t keep it boiling for too long)

  7. Add any condiments and serve!
