Macaroni Soup
How else can I preface this recipe except to say that it’s comfort food for the soul.

Ingredients:
1 yellow onion, chopped into small slices, the smaller the better, but you don't have to mince it!
4 medium sized potatoes, cubed
1 carrot cut into small cubes
4-500g of chicken breast, I bought $5 worth from the market (if that helps) -
500ml of beef stock - I like the taste of beef stock in chicken soup
Water, enough to cover the potatoes and carrots
Spices: black pepper, salt, italian herbs, a bit of brown sugar, 1 tablespoon of fish sauce - 1 pat of butter
Steps:
Melt and brown the butter until it starts to smell fragrant.
Fry the onion for 1 minute, then add the carrot and continue frying till the carrot starts to slightly soften.
Remove all from the pan/pot and use the remaining onions and oil to fry the chicken breast, you can cook it whole no need to cut into chunks.
Once the chicken is cooked, add the onions and carrots back into the casserole, stir fry it.
Add the potatoes in, stir fry briefly.
Add the broth and water, close the lid and let it boil.
When it boils, add all the spices.
Boil the pasta separately - either fusili or anything that can hold liquid, so no spaghetti or linguini.
Mix the pasta with the soup and serve.
