Prawn and Spinach Aglio Olio

This was a dish that I had great fun preparing; one pot dishes are truly the best. It’s quick, it’s hearty and the fresh prawn is so bouncy to chew!

Ingredients

  1. garlic, salt pepper etc

  2. Half a lemon's juice

  3. Spaghetti/linguine/whatever pasta you like

  4. Prawns (you can substitute this with any other items you prefer, examples include scallop)

  5. Spinach - I used 4 cubes of frozen spinach.

Note: For this recipe, I used fresh prawns, if frozen prawns work better for you, go ahead, whatever can make the dish work, just do that.

Steps

  1. Start with the frying the garlic and browning it, then throw the prawns in.

  2. Take out the prawns so as not to overcook them

  3. Start boiling the pasta on the side

  4. Cook the spinach while the pasta is boiling

  5. DO NOT overcook the pasta - when it's almost done, take it out of the water and transfer it into the pot with the spinach and fried garlic

  6. Add in the prawns

  7. Mix it all, add salt, pepper and serve with parmesan cheese for garnishing if you'd like.
