SESAME OIL CHICKEN PORRIDGE WITH CORN

In other words, my favourite baby food!

INGREDIENTS:

  • chicken, cubed.

  • uncooked rice

  • green onion, garlic, scallions (white part and green part separate)

  • chicken broth

  • vegetables - your choice. I picked corn and green vegetables cut into smaller parts.

  • toppings: sesame oil, salt, pepper, shallots, chilli oil

Steps:

  • marinate chicken that’s cubed, with sesame oil, salt, pepper and a bit of paprika

  • boil garlic, ginger and onion in hot water and chicken broth (ratio of 3 broth:2 water)

  • once it’s boiling stir in the rice and chicken

  • add the corn

  • only add in the vege near serving so it doesn’t turn yellow / overcooked

  • drizzle sesame oil and add scallions and fried garlic / chilli for taste

Make more and eat it again for the next meal!
